Black and White peppers are the berries of Piper nigrum L. of the Piperaceae family having reached appropriate degree of development and/or maturity for the intended product purpose.

Black Pepper
People are familiar with Black pepper. They are picked when the berries are about to ripe. After picked, they will be getting sun-dried which darkens the outer layer.

White Pepper
Unlike black pepper, white peppers are picked at full ripeness. These berries are then soaked in water to ferment. Finally, the outer layer is removed leaving only the inner seed.
